Cedar Plank Salmon


Chef Jake Madosik, aka "Jake the Tailgater" joined us to share his recipe for Cedar Plank Salmon.

Brown Sugar BBQ Cedar Plank Salmon

1 Filet of fresh salmon (Wild caught Sockeye for today's segment)

1 Cup Brown sugar

1 Tablespoon Dry Mustard

2 Tablespoons Chili Powder

1/2 teaspoon Ground Cinnamon

1/2 Tablespoon Ground Cumin

Zest of 1 Lemon

1/2 teaspoon Paprika

1/8 teaspoon Cayenne Pepper

1 Cedar plank soaked overnight

Preheat oven to 375 Degrees. Mix together all ingredients until well combined. Make sure to remove all pin bones from salmon and trimming before applying any seasonings. Place salmon filet onto cedar plank skin side down and rub both sides with oil(olive oil) and season vigorously with salt and pepper. Next pour some of the dry rub mixture over entire filet and rub until evenly coated. Place in oven and cook for about 25-35 minutes. Remove from oven and let cool for about 5 minutes and then slice and serve.

If using a grill for this recipe just heat gas grill or coal grill to about 375-400 degrees and place cedar plank with dressed salmon on grill side with indirect heat. Cook for about the same amount of time.
