Tomato Celebration Recipes

- Gazpacho

o Ingredients

  • ? 2lb Tomatoes, chopped
  • ? ½ English Cucumbers, chopped
  • ? 1/ C Red Onion, chopped
  • ? ½ Small Jalapeno, minced
  • ? 1 Garlic Clove. minced
  • ? 1t Worcestershire Sauce
  • ? 1/4C Extra Virgin Olive Oil
  • ? 3T Sherry Vinegar
  • ? 1/4C Tomato Juice
  • ? Salt to Taste

o Instructions

  • ? Combine all ingredients in a blender and puree till smooth
  • ? Serve chilled as is or garnish with a tablespoon of finely chopped tomato, cucumber and onion on each serving

- Panzanella Salad

o Ingredients

  • ? 3-4 Large Tomatoes, large dice
  • ? 1 Small Cucumber, peel, seed and dice 1”
  • ? 1/2C Red Onion, ½” dice
  • ? 2t Kosher or Flaky Salt
  • ? 4C Rustic Bread, pulled or cut into crouton size and toasted
  • ? ½ C Extra Virgin Olive Oil
  • ? 6T Red Wine Vinegar
  • ? 2t Garlic, minced
  • ? 1t Dijon

o Instructions

  • ? Combine tomatoes, cucumber and onion, add salt and toss well. Let rest 15 minutes
  • ? The vegetables will “push” liquid. Drain and reserve the liquid
  • ? Combine the vegetables with the croutons
  • ? Combine the reserved liquid with the remainder of the ingredients and blend well
  • ? Add the liquids to the vegetables and croutons, toss well
  • ? Allow the salad to rest for 5 minutes so the bread absorbs the liquid. The croutons should be half way between crunchy and soggy.
  • ? Serve

- Tomato, Cucumber and Cheddar Sandwich

o Ingredients

  • ? 2 Rustic Bread Slices
  • ? 3T Mayonnaise, home-made preferred
  • ? 4 Tomato, Thick Sliced
  • ? 6 Cucumber, thin sliced
  • ? 2 Slices Red Onion, thinly sliced
  • ? Sharp Cheddar, thinly sliced

o Instructions

  • ? Toast the bread lightly and spread with plenty of mayonnaise
  • ? Build the sandwich by layering the tomato, cucumber, onion and cheddar
  • ? Cut and serve

- Tomato Tart

o Ingredients

  • ? 1 10” Pastry Dough, store-bought or homemade
  • ? 1/4C Mayonnaise
  • ? 2 Egg yolks
  • ? 1/4C Sour Cream
  • ? 1/4C Cream Cheese
  • ? 3-4 Tomatoes, multi-size and color, sliced
  • ? Salt as needed
  • ? 2T Fresh Basil or Micro Herbs

o Instructions

  • ? Blind bake the pastry in a tart pan till golden brown
  • ? Combine the mayonnaise, yolks, sour cream and cream cheese and whip till smooth
  • ? Spread the bottom of the tart shell with about 1/3” of the mayonnaise mixture
  • ? Arrange the tomato slices over the tart, sprinkle salt and scatter with the herb
