Chocolate Peanut Butter Pie

It's National Peanut Butter Day! Professional Baker Megan Reed shows us a delicious pie recipe to celebrate.

Chocolate Peanut Butter Pie

  • 1 ¾ cup chocolate cookie crumbs
  • 6 Tablespoons butter, melted
  • 3 Tablespoons brown sugar
  • Pinch salt

Peanut Butter Filling:

  • 1 cup heavy cream, whipped
  • 8 ounce cream cheese
  • 1 cup peanut butter
  • ¾ cup brown sugar
  • 2 Tablespoon vanilla extract

Ganache Topping:

  • ½ cup heavy cream
  • 2 Tablespoons butter
  • 1 cup dark chocolate

In a food processor, process cookie crumbs, brown sugar, and salt. Slowly add your butter. Press the cookie mixture into a 9 inch pie pan. Bake at 350 degrees for 10 minutes. Allow to cool completely.

In a mixer, combine the cream cheese, peanut butter, brown sugar and vanilla and mix until smooth. Then slowly fold in the whipped heavy cream. Be careful not to over mix. Pour into the cooled pie crust and chill in the refrigerator for a few hours until set.

In a sauce pan, heat up the heavy cream and butter until it beings to simmer. Pour mixture over the dark chocolate and stir until the chocolate has melted and the mixture is nice and smooth. Pour the ganache on top of the peanut butter filling. Garnish the top of the pie with chopped peanuts. Enjoy!
