Duck and Bulldog Snacks For The Big Tournament

The Oregon Ducks and the Gonzaga Bulldogs take on the Carolinas in tomorrow night's epic Final Four Tournament...and that calls for some extra special snacks in honor of our Pacific Northwest Teams! Roasted Duck Tacos with Ninkasi Stout Chipotle BBQ Sauce and North Carolina Coleslaw

Ingredients

  • 1 whole roasted duck from Chinese Restaurant, carved and shredded
  • 1 12oz bottle store bought original BBQ sauce
  • 4 oz Ninkasi Oatis Stout
  • 2 T diced chipotle with sauce
  • 1/2 head of cabbage, shredded
  • 2 large carrots, grated
  • 1/4 cup white vinegar,
  • 1/4 cup organic apple cider vinegar
  • 1/4 cup sugar
  • 1 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 8 taco tortillas, small
  • 1/4 cup hazelnuts, crushed

Directions

1. Whisk together vinegars, sugar, salt and pepper. Toss in cabbage and carrots. Refrigerate at least 30 minutes.

2. In a small saucepan, combine BBQ sauce, chipotles, and beer. Simmer for 30 minutes until thickened

3. Heat a pan over medium heat. Stir fry duck 1-2 minutes, add BBQ sauce, toss and cook 1-2 minutes.

4. Warm tortillas 1 minute each side

5. Top tortillas with duck, slaw, and hazelnuts. Serve.


Sonoran IPA Bulldogs with Carolina Gold BBQ Sauce

Ingredients

Corndogs

  • 10 all beef hebrew hot dogs, halved
  • 1 1/4 cups all-purpose flour plus 1/2 C
  • 1 cup cornmeal
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp granulated sugar
  • 1/2 tsp alt
  • 2 t chili powder
  • 2 eggs
  • 3/4 C No-Li Born & Raised IPA
  • 3/4 C buttermilk
  • 1 package bacon, cooked til crispy and crulmbled
  • 3 jalapenos, seeded and diced
  • 1 C shredded cheddar cheese
  • 1/2 C cotija cheese
  • Vegetable oil for deep-frying

Carolina BBQ Sauce

  • 1 cup yellow mustard
  • 1?2 C apple cider vinegar
  • 1?4 C molasses
  • 1?4 C honey
  • 1/4 cup applesauce
  • 1 T dark brown sugar
  • 2 t Worcestershire sauce
  • 1 t hot sauce

Preheat deep fryer to 375.

1. Combine flour, cornmeal, baking powder, baking soda, chili powder, salt, and sugar

2. Whisk eggs, beer, buttermilk

3. Pour wet ingredients into dry and stir to combine. Mix in bacon, jalapenos, and cheeses. Pour into tall skinny container for dipping.

4. Toss hot dogs in 1/2 C flour then skewer. Then dip into batter

5. Deep fry 3 minutes until golden brown. Serve with Carolina Gold BBQ Sauce

Carolina Gold BBQ Sauce
