Protein of choice if desired
Assorted fillings: shredded cheese, black/pinto beans, onions, peppers, green chiles/jalapeños, corn, rice/quinoa - really, anything that sounds good!!
Combine all ingredients and wrap in the tortilla - place in an oven-safe dish, seam-side down. Bake for 15 mins at 375*. Remove from oven and cut open the top so you can squish a bit of the oozy guts out. ?? Top with blood red enchilada sauce and/or wickedly spicy cilantro-peno dressing.
