AM Northwest host, Helen Raptis, shows us how to make Mini Chili Relleno Muffins


Ingredients

6 Eggs

¾ Cup Sour Cream

¼ Tsp Salt

1 ½ Cup Shredded Monterey Jack Cheese

1 ½ Cup Shredded Cheddar Cheese

2 cans of chopped green Chilies

Tabasco Sauce for spice (optional)

Cayenne Pepper


Directions

Preheat oven to 350 degrees

Divide mixture into mini muffin baking pans

Top with a dash of Cayenne pepper

Bake about 25-30 minutes until egg is set in the middle

Serve as appetizers
