Irish Soda Bread


We think Mindy Simmons is one of the best bakers in town! She stopped by to get us ready for St. Patrick's Day with her special recipe for Irish Soda Bread.

Decadent Creations: Irish Soda Bread

  • 4 cups All-Purpose Flour
  • 1/2 cup sugar
  • 1 tsp. baking soda
  • 2 tsp. kosher salt
  • 4 Tablespoons butter, cold
  • 1 cup currants
  • 1 3/4 cup buttermilk
  • 1 egg
  • 1 tsp. orange zest
  • eggwash and crystal sugar or sanding sugar topping (optional)

Stir flour, sugar,salt, and baking soda together in a large bowl. Cut in the cold butter either with yor hands or a pastry blender. Toss in currants. Pour buttermilk over the dry all at once and gently toss together,do not overix. With extra bench flour, gently roll the dough into a ball (did I mention not overmixing/over handling?). Eggwash, sprinkle crystal sugar, sanding sugar, or just extra sugar, if desired. Sore the bread with an X. Bake in a 350F oven for aprox 45 minutes. Enjoy with coffee or sliced and toasted with salted butter.
