Kids' Happy Hour Before Trick-or-Treating

Culinary Educator, Rachel Fredricks made a healthy happy hour spread...before the kids hit the streets for trick-or-treating.


Sweet Potato Hummus

1 15oz can garbanzo beans, drained and rinsed

1-2 cloves garlic

2 t lime juice

2 t cumin

1/2 t cinnamon

1/4 c (2 oz) water

1/4 c (2 oz) extra virgin olive oil(or to taste)

salt to taste

1 cup cubed cooked sweet potato

Place garbanzo beans, garlic, lime juice, cumin, cinnamon and salt in the bowl of a food processor. Pulse a few times, add water and run for 20 seconds. Scrape down sides, with processor running, slowly add oil and continue to process for 3-5 minutes, stopping to scrape down sides at least one time. In a separate bowl mash sweet potato with a potato masher or fork, it should remain a bit chunky. After hummus has processed until it is very smooth and a bit runny, fold it into the sweet potato mixture. Taste and season with more salt, cinnamon or cumin if desired.
