Easy Peasy Banana Muffins
- 3 large ripe bananas
- 1 egg
- 3/4 cup sugar
- 1/3 cup oil
- 1 1/2 cups flour (all purpose or gluten free)
- 1 teaspoon each - cinnamon, baking soda, baking powder
- 1/2 teaspoon salt
- Combine mashed bananas, egg, sugar and oil; add flour, cinnamon, baking soda, baking powder and salt.
Spoon (an ice cream scoop works great for this) into silicone pan or liners. Bake at 350* for 10 minutes; rotate and cook 7-9 minutes longer, or until golden brown.
Enjoy one warm (because quality control), then cool remaining muffins completely before freezing or topping with cream cheese and some orange zest!
