Cookie Cluckers

Cookies might need some grains to hold them together, but that doesn’t

mean they can’t be filled with the taste (and protein) of chicken. This

simple cookie is ready to bake before your oven is even warmed up.

  • 1/2 pound boneless, skinless
  • chicken thighs

Preheat Oven to 350°F.

Pulse chicken in a food processor for 10-12 pulses, or unBl

finely chopped.

  • 1 1/4 cups oats

Add the oats and cinnamon to the food process and pulse

10-12 Bmes or unBl the oats are reduced and blended with

chicken. Run food processor for an addiBonal minute so

that the mixture forms into a ball.

1/4 teaspoon cinnamon

Cover a baking sheet with a silicone mat or parchment

paper and pat the mixture out into an 8-inch square. Using

a pizza cuPer, cut the dough into eight verBcal strips of

equal width. Cut the dough once horizontally in eight strips.

Bake for 25 minutes or unBl lightly browned and dry.

Store in the refrigerator for up to 4 days or in the freezer for

up to 2 months.

Yield: 64 cookies
