National Meatball Day: Meatball Sandwiches

Meatball Subs

Serves 4

  • 1# ground meat (I use ½ ground chuck and ½ ground Italian sausage, but use any combination that suits you)
  • 2 cups sauce (I use Souper Natural Vodka Cream sauce, but again, anything that suits you)
  • 1 egg
  • ¼ cup minced onion
  • ¼ cup breadcrumbs (rice panko is a great gluten free option)
  • ¼ cup parmesan cheese
  • Mozzarella
  • Hoagie-style buns
  1. Preheat oven to 375.
  2. Combine meat, egg, onion, breadcrumbs and parmesan cheese in bowl.
  3. Using your hands or an ice cream scoop, drop onto greased/parchment-lined baking sheet, spacing evenly. Flatten balls slightly.
  4. Bake for 10 minutes, then rotate pan and bake 7-10 minutes more or until internal temperature reaches 160 degrees.
  5. Meanwhile, heat sauce on the stove over low heat.
  6. Remove balls from sheet, draining grease as necessary, and submerge in saucepan, simmering for at least 5-10 minutes.
  7. Toast buns if desired and set oven to broil.
  8. Assemble subs, sprinkling mozzarella on top and place under broiler until melted and slightly browned.

Veggie-Ball Subs

Serves 4

  • 1.5 cans cannellini beans
  • 1 roasted sweet red pepper
  • 2 cups sauce (I use Souper Natural Vodka Cream sauce, but use anything that suits you)
  • 2 cups breadcrumbs (rice panko is a great gluten free option)
  • ½ cup minced onion
  • 2 cloves garlic
  • 1 egg
  • ¼ cup parsley
  • 1.5 tsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • Mozzarella
  • Hoagie-style buns
  1. Preheat oven to 350.
  2. Combine beans and red pepper in food processor and pulse until chopped, but not completely pureed.
  3. Add onion, garlic, breadcrumbs, egg, parsley, oregano, salt and pepper – puree until fully combined.
  4. Using your hands or an ice cream scoop, drop onto greased/parchment-lined baking sheet, spacing evenly. Flatten balls slightly.
  5. Bake for 10 minutes, then rotate pan and bake 5 minutes more, or until they have a golden coating and are firm to the touch.
  6. Heat sauce in microwave or on stovetop.
  7. Toast buns if desired and set oven to broil.
  8. Assemble subs, pouring sauce over balls and sprinkling mozzarella on top; place under broiler until melted and slightly browned.
