- 2-3 cups can Peaches (drain ½ liquid)
- Or 2 cups fresh Peaches
- ½ -3/4 cups sugar (or to your taste)
- ½ c butter
- 1 tsp. cinnamon
- ½ tsp nutmeg
- 1 Tbsp. Vanilla
- 1Tbsp. lemon juice
- 2 Tbsp. cornstarch
Put all ingredients in a medium pot and heat just to a boil. Mix cornstarch and water to make a slurry. Add to Peach mixture to thicken.
- 2c flour
- 1stick of butter or ½ cup butter & ½ cup Crisco
- 1 egg
- ½ c sugar
- Dash of salt
In a medium bowl add flour, sugar, salt together. Cut butter and/or Crisco into flour. Add egg and enough buttermilk to pull mixture together.
Roll out a small portion of crust mixture onto a cookie sheet and bake until golden brown.
Put ½ Peach mixture into baking dish. Break up baked crust on top and add a little butter and sugar on top. Add remaining Peach mixture. Roll out crust and place on top of Peach Mixture. Brush top with melted butter and sprinkle with sugar. Bake at 350 degrees until golden brown.
