Penne with Vodka Sauce

Professional soup and sauce chef Heidi Liebowitz shows us how to make her famous vodka sauce!

Recipe:

  • 2 cups crushed tomatoes
  • 1/2 onion-diced
  • 3 cloves garlic
  • 2 ounces vodka
  • 1t kosher salt
  • 1t black pepper
  • 1/2 t crushed red pepper
  • 1/2 t dried thyme
  • 2t dried basil
  • 1t dried oregano
  • 1/2 cup heavy cream
  • handful of fresh basil
  • 1/2 c olive oil
  1. Coat saucepan with olive oil
  2. Add onions and garlic and let cook about 5 minutes
  3. Add dried spices and cook a few more minutes
  4. Add vodka and cook about 5 more minutes
  5. Add tomato, heavy cream and fresh basil

Let cook about 30min
