Salmon Mousse & Chicken Salad

Salmon Mousse on Cucumber

  • 6 English Cucumbers
  • 12 oz. cream cheese
  • ½ cup sour cream
  • 2 T lemon juice
  • 1-2 T. whipping cream
  • 1-2 T chopped dill (use more or less to taste)
  • 2 T. chopped onion (optional)
  • ½ t. no salt seasoning
  • ½ t. black pepper
  • 1 lb. smoked salmon cut in pieces
  • (Optional: retain a small amount of salmon for topping)

Put all ingredients in food processor and pulse until smooth. There will still be small pieces salmon.

Slice cucumbers in 1” diagional pieces. Scoop out a small amount of the seeds. Put salmon mixture into piping bag and pipe into cucumbers. Put a small piece of salmon on top of each cucumber optional. Arrange cucumbers on tray. Refrigerate until ready to serve.

Sandra’s Chicken Salad

In a medium size bowl. Combine the following:

  • 3 lbs. Shredded chicken breast
  • 1 med. Red onion finely diced
  • 1 med. Red and Green bell pepper finely diced
  • 3 stalks of celery finely diced
  • 4 boiled eggs finely diced
  • ½ -1 cup dried cranberries
  • ½ lb. green grapes sliced in half
  • 1 c. chopped pecans (optional)
  • 1-2 T. sugar
  • 1t. Lawry’s seasoning salt
  • ½ t. black pepper
  • 1 c Mayonnaise
  • 1-2 t. Mustard
  • ½ c Sweet Relish

Mix all ingredients in bowl. Adjust Mayonnaise, Mustard and Sweet Relish to your taste. Start with a little at a time. You do not want it to be too wet. Serve on crackers, baguette, croissants or just eat by itself.
