Sweet Potato Hash

Sweet Potato Hash Recipe

Serves 2

  • 3 C Sweet Potatoes, peeled, diced and blanched
  • 1 C Carrots, peeled diced and blanched
  • 1 T Garlic, minced
  • 1 C Celery, diced
  • 2 C Yellow Onion, diced
  • 1 T Butter
  • 1 T Cooking Oil, Canola for Instance
  • 12 OZ Cooked Chicken Breast, either diced or pulled
  • 1/2 t Cumin
  • 1/2 t Salt
  • 1/2 t Black Pepper
  • 1/2 C Chicken stock
  • 1/2 C Heavy Cream
  • Pinch Thyme

Saute the sweet potatoes in the butter and oil to brown

Add the garlic and cook 3-4 minutes

Add the carrots, celery and onion and continue to cook to soften

Add the chicken, seasonings, stock and cream and simmer till the mixture is thickened

Serve over English muffins or toast with poached eggs sprinkled with thyme
