TORTELLINI ZUCCHINI & SPECK

Ingredients:

  • 2 pounds of Zucchini
  • Onion
  • Exvoo
  • Parmigiano (grated )
  • White wine
  • Speck

Making it:

  • Saute’ the speck till it is crispy, add the onion ( cut it very little) and saute’ till the onion is gold
  • Add the zucchini (cut them in little cubes or similar) and let them jump in a frying pan
  • After 5 minutes, add 1 glass of white wine
  • Let the alcohol evaporate
  • Cook for 15 minutes circa
  • Serve it with some grated Parmigiano on top
