Zucchini Surprise Cupcakes (makes 12)

Cupcakes:

• 1 1/2 cups all-purpose flour

• 1 cup brown sugar

• 1 teaspoon baking powder or soda

• 1/2 teaspoon ground cinnamon

• 1 teaspoon salt

• 1 zucchini (10 ounces), coarsely grated (1 1/2 cups)

• 1/3 cup vegetable oil

• 2 large eggs

• 1 teaspoon vanilla extract

Frosting:

• 16 oz confectioners sugar

• 1/2 cup melted butter

• 1/2 teaspoon vanilla extract

• 1 teaspoon salt

Preheat oven to 350 and line cupcake tin. Combine ingredients and beat until smooth-- about 3 minutes. Fill cupcake liners and bake for 30 min. Test with a fork. While cupcakes cool, combine frosting ingredients and beat for 3 minutes. Frost your cupcakes and enjoy!
