Murphy's Garlic Rice
1-1/4 cup long grain rice, dry - cook according to package instructions.
In the meantime, sauté in a large frying pan:
1 cube of butter
2 cloves garlic, minced
2 cubes beef bullion
1 small onion, chopped
1 tsp dried oregano leaf, crushed between palms
1-1/2 cups of thinly sliced cremini mushrooms
Sauté til mushrooms are reduced and onion and garlic are clear.
Preheat oven to 350. When rice is cooked, spoon into the onion mushroom mixture and toss until mixed well. Sprinkle with a 1/3 cup of slivered almonds. Bake uncovered for 1 hour or more until the rice looks slightly crispy on top. Garnish with freshly chopped parsley. Served with fish, pork, seafood or chicken.
