      Banh Mi Sandwiches

      For the Pickled Carrots and Daikon:

      • 1/3 cup carrots, shredded or cut into small matchstick size pieces
      • 1/3 cup daikon (white radish), shredded or cut into small matchstick size pieces
      • 1/2 cup rice wine vinegar
      • 1/2 cup water
      • 1 T sugar

      For the Banh Mi's:

      • 2 T mayo
      • 4 tsp sriracha
      • 2 french rolls
      • 2 slices ham
      • approx. 1/4 English cucumber, sliced lengthwise
      • 1/4 cup cilantro, chopped
      • 2 hard boiled eggs, sliced

      Instructions:
      Begin by making the pickled carrots and daikon so that the mixture has some time to sit. Simply mix together the rice wine vinegar, water and sugar until combined. Add in the carrots and daikon. Cover and let sit while you prepare the rest of your ingredients.
      Next, whisk together the mayonnaise and sriracha. Taste test and add more sriracha if you can handle it! Cut open the french rolls, and spread generously. Top with sliced ham, cucumber slices, cilantro, eggs, and finally, a generous scoop of the pickled carrots and daikon.
      Enjoy immediately!
