      Cilantro Crema

      Cilantro Crema from Who Wants Seconds? by Jennie Cook
      Prep time: 10 minutes
      Makes 1 1/3 cups
      8 ounces vegan cream cheese
      1 teaspoon fresh lemon juice
      1/4 cup rice milk
      1/2 bunch cilantro, minced
      Place cream cheese, lemon juice, and 2 tablespoons rice milk in blender and blend until combined. Add the remaining milk 1 tablespoon at a time until you achieve a sour cream-like consistency. Pulse in cilantro. Do not over-process unless you want a green crema. Chill and drizzle in more rice milk to thin as needed before serving. Serve with fritters, raw vegetables, or any dish suitable for dipping.
