Edamame Hummus & Sunflower Seed Basil Pesto

      Edamame Hummus
      1 cup cooked edamame
      2 tablespoons tahini
      Juice of 1 lime
      1 garlic clove
      2 teaspoons ground cumin
      1/4 cup extra virgin olive oil (or more for creamier texture)
      salt to taste

      Combine edamame, tahini, lime juice, garlic and cumin in the food processor. Process until smooth, slowly drizzle the oil in and process until creamy. Season to taste with salt. Great as a dip or as a spread on sandwiches.

      Sunflower Seed Basil Pesto
      2 cups fresh basil
      1/2 cup roasted sunflower seeds, unsalted
      2 cloves garlic
      1/2 cup extra virgin olive oil
      1/3 cup grated parmesan cheese
      salt and fresh grated pepper

      Pulse together the basil, seeds, garlic and cheese. Slowly add the olive oil while processing. Process until fully incorporated and as course as you like. Delicious with pasta or grains.
