      Grilled Wild Caught Oregon Albacore with Summer Herb Sauce and Heirloom Tomatoes

      Wild Caught Oregon Albacore,1 lbs.
      Salt/Pepper..to taste

      Heirloom Tomatoes, Sliced....as needed

      Sauce:

      Olive Oil1 cup

      Shallots minced1 tbsp.

      Parsley, chopped...1 tbsp.

      Dill, chopped..1 tbsp.

      Basil, Julienne2 tbsp.

      Capers,1 tbsp.

      Olives Nicoise, chopped..1 tbsp.

      Lemon Juice.1/2 lemon

      Salt/Pepperto taste

      Combine all ingredients for sauce, reserve at room temperature.
      Cut Albacore into medallions and grill until medium rare in the middle (do not over cook) 1-2 min. each side depending on thickness.

      Serve with Sliced tomatoes and Summer Herb sauce.
