Guilt-Free Mashed Potatoes

      Guilt-Free Mashed Potatoes:

      Mashed Potatoes Ingredients:
      3 cups Parsnips
      1 tbsp Olive Oil
      1 clove Garlic
      1 tsp Sea Salt

      Gravy Ingredients:
      1/4 cup Almonds (soaked)
      1 tsp Soy Sauce
      1 tbsp Olive Oil
      1 tbsp Brewer's Yeast
      1 cup Pure Water

      1. Combine mashed potatoes ingredients and blend in food processor until smooth, (pulse to keep an chunkier texture).
      2. Pour mixture into a serving bowl
      3. Combine gravy ingredients in Vitamix or high-powered blender, and mix, adding more water as needed for desired consistency.
      4. Pour gravy over mashed potatoes or serve on the side for a guilt-free twist on a dinnertime staple.
