      Homemade Cranberry Sauce with Fresh Pears

      Serves 8

      • 1 cup pear juice
      • 1/3 cup clover honey
      • Zest from 1 orange
      • 3 cups fresh cranberries (about 12 ounces)
      • 1/2 teaspoon ground cardamom
      • 2 medium firm but ripe pears, peeled, cored and cut into 1/2 inch cubes

      In a medium saucepan, bring pear juice, honey, orange zest, cranberries and cardamom to a boil over high heat. Reduce heat to medium, add pears and simmer until pears are tender and cranberries have popped, about 15 to 20 minutes. Remove from heat and let cool to room temperature. Cover and refrigerate until cold or overnight.
