Simply De-Lite-Ful: Chicken Crunch Salad

      Chicken Crunch Salad

      This is a meal in a salad with flavors that meld beautifully. We like this salad served on open lettuce leaves, sandwiched as a filling between slices of delicious bread, or wrapped in flatbread.

      3 cups seasoned cooked chicken breast, cubed or shredded
      1 1/2 cups diced celery
      1 cup grapes, halved
      1/4 cup chopped, roasted almonds, optional
      1/2 cup nonfat mayonnaise or Smart Balance mayonnaise
      1/4 cup sweet pickle relish
      2 tablespoons diced onion
      Salt and pepper to taste

      Toss all ingredients together. Keep refrigerated until ready to serve.

      SERVES 6-8
