On-the-Go Power Breakfast
These are the greatest solution for the student who doesn't want to sit down to breakfast, or the busy person rushing off to work They also make a yummy lunch-box alternative to a sweet treat. They are a great pick-me-up snack when you need energy and dinner is too far off. They taste so good that you can trick yourself into thinking you're eating cookie dough!
Makes 4 dozen walnut-sized pieces.
- 4 cups regular rolled oats
- 1 cup natural peanut butter
- 1 cup natural almond butter
- 1 cup honey
- 3/4 cup ground flax seed
- 1/2 cup chopped almonds
- 1 1/2 teaspoons vanilla
- 1-2 scoops protein powder (optional)
- 1/3 cup mini semi-sweet chocolate chips (optional)
Put all ingredients -- except chocolate chips -- in a large mixing bowl. Using cookie paddles or a dough hook, mix until completely incorporated in a mass.
Stir in chocolate chips, if using.
With an ice cream or cookie scoop, form into walnut sized balls and put in single layer in airtight container. You can make a second layer with plastic wrap between the layers.
Refrigerate untill ready to grab and go for a yummy, nutritious breakfast.
