Simply De-Lite-Ful: Petite Pumpkin Spice Donuts

      Petite Pumpkin Spice Donuts
      Makes about 3 dozen mini donuts

      For Donuts:

      • 1 3/4 cups flour
      • 1 1/2 teaspoons baking powder
      • 1/2 teaspoon salt
      • 1 teaspoon cinnamon
      • 1/2 teaspoon nutmeg
      • 1/2 teaspoon allspice
      • 2 tablespoons canola or extra light olive oil
      • 1/3 cup applesauce
      • 1/2 cup brown sugar
      • 1/4 cup egg substitute or egg white
      • 1 1/2 teaspoon vanilla extract
      • 3/4 cup canned pumpkin
      • 1/2 cup milk

      For glaze:

      • 1 cup powdered sugar
      • 1 Tablespoon non fat milk (A drop or two more if needed to thin a little)
      • * 1/2 tablespoon vanilla (or flavor of your choice)
      • pinch of salt

      Or.... dip in Cinnamon Sugar or sprinkle generously with powdered sugars

      Preheat oven 350 F. Spray a mini donut pan and set aside. (May make into mini cupcakes if preferred.)

      In a bowl, mix flour, baking powder, salt and spices together and set aside.
      In a large bowl (or the bowl of an electric mixer fitted with the paddle attachment) whisk together oil, brown sugar, egg product, vanilla, pumpkin and milk until combined.

      Slowly add the dry ingredients into the mixture and stir until just combined, careful not to over mix.
      Using a pastry bag or a steady hand and a spoon, fill each donut cup with the batter. The donut cups should be fairly full, but not overflowing. Bake for 5-7 minutes, until donuts spring back when gently pressed (don't over bake). If you're using a larger donut pan, allow them to bake for 9-12 minutes).

      Turn donuts out onto a wire rack and allow to cool for a few minutes.
      Just before serving, dip in desired flavor of glaze and set on rack to drip-- or dip in cinnamon sugar or sprinkle generously with powdered sugar.

      If you're not going to serve the donuts immediately, you can bake them up to a day in advance and store them in an air-tight container, or freeze for up to a week. If frozen, bring to room temperature before glazing and serving.

      Glaze flavor options:
      Maple1/2 teaspoon
      Chocolate2 teaspoons cocoa powder (Will need to add a drop or two of milk for good consistency)

      Our favorite party option:
      In small bowls, offer Vanilla, Maple and Chocolate Glazes to dip the donuts in and then have more small bows with a variety of toppings to dip the wet glazed donuts in such as :

      • Finely chopped pecans or other nuts
      • Fine coconut (can make your own by chopping shredded coconut in food processor till fine)
      • Sprinkles and anything else your imagine suggest would be delicious.
      • Cinnamon sugar or Powdered sugar.

      Don't dip in glaze for the sugars. Just dip the donut in.

      A big platter of donuts and a crowd of hungry donut lovers makes the party complete.
