      Method



      For Ricotta






      VitaMix all ingredients until smooth


      Bring milk and heavy cream up to 200.




      Use blue scoop in oval molds



      Add in basil and cool to 160 , strain and bring back up to 180



      Bake 275



      Add in vinegar, stir; then salt, stir








      Let sit for 2 hours









      Pour into hotel pan lined w/ 4 layers of cheese cloth, let set overnight
