New food cart pod opens with 31 stalls in Beaverton
BEAVERTON, Ore. —
A new food cart pod is up and running in Beaverton and has a new claim to fame.
They say it’s Washington County’s largest food cart pod. It has 31 spots and 29 of them are already filled.
It sits between Millikan and Canyon Road just south of City Hall.
The space used to be a parking lot, but the developers, the Biggi family, wanted to combine their experience in food and real estate to turn it around.
"We wanted to create a destination spot here for Beaverton and bring the community together and give 31 little entrepreneurs a chance to do some business," said Dana Biggi, a project partner.
She said they have two of each kind of cuisine, so there’s something for everyone. The project was made possible in part by a city contest a few years ago that included a matching grant.
