Bay Shrimp Salad w/ Ginger-Lime Dressing

Ingredients

  • Bay Shrimp………………………………………………1/2C
  • Avocado ½” Dice………….…………………………..1/4C
  • Mango, ½” Dice………………………………………..1/4C
  • Papaya, ½” Dice……………………………………….1/4C
  • Ginger-Lime Dressing (See Below) …………1/4C
  • Mint, Chiffonade………………………………………..1 T
  • Cilantro, Chiffonade……………………………………1 T
  • Raspberry Puree (Optional) ……………………….1T

Dressing

  • Lime Juice……………………………………………………3T
  • Fresh Ginger Minced……………………………………1T
  • Jalapeno (Optional)…………………………………..1/2T
  • Saffron (Optional)……………………………………Pinch
  • Rice Wine Vinegar……………………………………….1T
  • Canola Oil……………………………………………………3T

Instructions

- Dress the shrimp with just a little dressing

- Using a 2” ring mold for an appetizer or a 3” ring mold for a salad, layer the ingredients like this:

o Papaya

o Shrimp

o Avocado

o Mango

- Press lightly to “set” the mold then holding down on the food, slide the mold up and away

- Drizzle the remaining dressing around and decorate with dots or swooshes of raspberry puree

- Scatter the herbs around

- NOTE: Your choice of a bit spicy by adding the jalapeno or a bit “special” by adding saffron threads but not both.
