Sandra’s Black-Eye Pea Salad

  • 4 cups Black-eye peas (cooked and cooled)
  • 1 each red, green and yellow bell peppers diced
  • 1 red onion diced
  • 1 jalapeno seeded and diced
  • 1 cup sliced grape tomatoes
  • ½ cup parsley or cilantro chopped

Optional:

  • 1 English cucumber cubed
  • 1 Avocado large diced
  • 1 cup whole corn
  • 1 cup feta cheese
  • ½ cup sliced black olives

Italian dressing

Optional:

Make your own

  • ½ cup rice wine vinegar
  • ½ cup Olive oil
  • ¼ cup Apple Cider Vinegar
  • 2 Tablespoons Sugar
  • Salt and Pepper

Put all ingredients in separate bowl and mix until well blended. Adjust seasoning to taste.

In large bowl combine all ingredients. Add any of the optional ingredients you want. Pour Italian or Make your own dressing over salad. Chill for 2 hrs. before serving to allow flavors to blend.
