Crispy Cauliflower Lime Tacos

Coconut Lime Cauliflower Tacos

1 medium cauliflower

1 cup full fat coconut milk

3 Tbsp lime juice

1 tsp salt

1/2 cup Panko bread crumbs

1/2 cup cornmeal

1/2 cup unsweetened coconut, shredded

1/4 cup rice flour

1 1/2 tsp paprika

1tsp cumin

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp turmeric

1/4 tsp black pepper



Red cabbage, sliced or chopped

Hampton Creek Chipotle Mayo

Avocado slices


Preheat the oven to 400 degrees.

Cut the cauliflower into small pieces.

Make the liquid batter by whisking together the coconut milk, lime juice, and teaspoon of salt in a bowl and set aside.
