Ethiopian Cabbage and Carrots

Tikil Gomen (Ethiopian Cabbage and Carrots) Recipe


1 small yellow onion sliced lengthwise

3 tablespoons olive oil

2 teaspoons minced garlic

1/2 teaspoon minced ginger

1 teaspoon Turmeric powder

9 cups shredded green cabbage and carrot mix (coleslaw mix)

1/4 cup water

Salt to taste


Put the sliced onion in a medium pot and sauté for about 5 minutes, then add the oil and continue to sauté for 2 more minutes. Stir in the minced garlic and ginger, and cook until you smell the aroma from the garlic, for about 1 to 2 minutes. Add the turmeric powder and simmer for 3 minutes. Stir in the cabbage and carrot mix and water, cook for about 10 minutes. Add salt to taste.
