Professional Baker Megan Reed makes her scrumptious Granola Cookies!

The Recipe:

  • Makes 18 cookies
  • 1 cup brown sugar
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoon flax meal
  • 2/3 cup shredded coconut
  • 1/2 cup rolled oats
  • 1/2 cup sunflower seeds
  • 1 cup dried blueberries

Preheat the oven to 350 degrees. In a mixer, combine brown sugar and coconut oil and mix until incorporated. Add the eggs on at a time and then the vanilla. In a separate bowl, mix together the whole wheat flour, baking soda, salt, cinnamon, flax meal, coconut, and oats. Add the dry ingredients to the mixer and mix until just incorporated. Fold in the sunflower seed and dried blueberries. Using a 1 1/2 oz cookie scoop place the cookies on a parchment lined baking sheet, 8 cookies per pan. Lightly press the top of the cookies down. Bake for 12-14 minutes, rotating half way through, until the edges begin to brown. Cool completely on the baking sheet. Enjoy!
