Peppermint Fudge Cupcakes

Recipe (makes 12):

Cupcake ingredients

  • 1 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup vegetable oil
  • 1/2 cup softened butter
  • 2 eggs

Frosting ingredients

  • 16 oz confectioner’s sugar
  • 1/4 cup heavy whipping cream
  • 1/2 cup melted butter
  • 1 tsp peppermint extract

Preheat oven to 350 and line cupcake tin with festive liners. Combine dry and wet ingredients and beat until smooth. Your batter will be thick, that’s okay! Fill liners about two-thirds of the way and bake for 16 minutes. I like these cupcakes best with a fudge-like texture, if you’re more partial to chocolate cake, you can leave them in the oven two to three minutes longer.

Remove cupcakes and set aside to cool. Mix frosting ingredients either by hand, or using a mixer on high, for up to three minutes. You should see small peaks in the frosting that can stand up on their own. This means the consistency is perfect for piping. Pipe frosting on the cooled cupcakes and garnish with peppermint candy canes. Enjoy!
