Scary Meatloaf

Scary good Meatloaf

  • 1 cup fresh bread crumbs
  • 1/3 cup whole milk
  • 1 medium onion roughly chopped
  • 3 cloves garlic, crushed
  • ½ bulb fennel, roughly chopped
  • 1 medium carrot, roughly chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cider vinegar
  • ¼ teaspoon ground allspice
  • ¼ teaspoon Cheyenne pepper
  • 4 slices bacon, roughly chopped
  • ½ cup pitted prunes, roughly chopped
  • 1 ½ lbs. ground beef
  • ½ lb ground pork
  • 2 large eggs
  • 1/3 cup chopped parsley

Pre heat oven to 350 degrees. Place bread crumbs and milk in a large mixing bowl. Place onion, carrot, fennel and garlic in the bowl of food processor. Process until well chopped. Melt butter in a medium saute pan and add vegetables. Saute until slightly browned and softened, about 10 minutes. Allow to cool slightly and add to bread crumbs. Put bacon and prunes in bowl of food processor and process until it becomes a smooth paste. Add meat to vegetables along with eggs, vinegar, Worcestershire, allspice and Cheyenne pepper. Add bacon and prune paste to bowl and use your hands to mix until thoroughly combined. Shape into a loaf and place in baking dish. Place in oven and bake for 1-1/4 hours. Internal temperature should be 155F. Allow to cool slightly before slicing.
