It's a healthy one-dish meal that will fill you up, without filling you out. Culinary Instructor Rachel Fredricks joined us to show how to put together a quiona and kale salad with a healthy, but creamy vinaigrette!
Creamy Avocado Vinaigrette
Makes 1 cup
- 1 avocado
- 2 oz total - lime juice + apple cider vinegar (can use all lime or all vinegar)
- 1 clove garlic
- salt and pepper
- pinch sugar or sweetener of choice (honey, stevia)
- up to 2/3 cup extra virgin olive oil or other neutral oil (can replace 1/3 oil with water)
Place avocado, lime juice, vinegar, garlic, salt and pepper in the bowl of a food processor or in a blender. Pulse a few times to chop, with blades running, slowly drizzle in the oil to make a creamy dressing, (can decrease the oil by 1/3 and replace with water). Taste and adjust seasonings, add a bit of sugar if too acidic.
Flavoring add in ideas ffor vinaigrette: toss in jalapeño, cilantro, cumin, chili powder, oregano, basil, feta cheese to food processor with avocado.
