Oregon Blueberry Breakfast Bites
- 1 cup thawed frozen blueberries
- 1 cup rolled oats
- 2 tsp. peanut butter (or nut butter of choice)
- 1/2 cup coconut
- 1/4 cup dried blueberries
- extra coconut for coating
In a food processor mix blueberries, oats, nut butter, and coconut. Transfer mixture into a bowl and stir in dried blueberries. Make into bite sized balls, roll in coconut and enjoy!
