Morning Tofu Scramble

Prep time: 5 minutes/Cook time: 15 minutes

Servings: 2

Ingredients

  • 1 package 14 oz tofu, firm or extra firm, drained and pressed
  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • 2 Tbsp liquid vegetable broth or water
  • 1 Tbsp nutritional yeast
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 cup favorite veggies (optional)

Heat oil in skillet over medium heat. Add garlic to oil and let cook for 2 minutes. Crumble tofu with fingers into the skillet, breaking apart any big pieces. Stir tofu with oil and garlic.

Mix vegetable broth, nutritional yeast, onion powder, salt, turmeric, and pepper together in a bowl. Pour over tofu and stir to cover evenly.

Continue to heat for 10-15 minutes until tofu is cooked and seasoning is blended well, stirring often.

Add optional veggies, if using, and stir until cooked.

Remove from heat and serve with optional toppings or enjoy as is.

Optional additions

Top with vegan ranch, aioli, salsa, or sriracha - whatever you wish!

Add 1 cup chopped kale to scramble and heat for 5 minutes, covered.

Add halved cherry tomatoes or tomato wedges to scramble and heat for 30 seconds.

Top with sliced avocado for a creamy and healthy addition.


Country Vegan Sausage Gravy

Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup whole wheat flour
  • 2 cups soy or almond milk
  • 1/4 cup nutritional yeast
  • 1 Tbsp broth or one bouillon cube
  • 1/2 tsp black pepper
  • 1/2 tsp sage
  • Salt to taste
  • 14 oz. vegan sausage, like Gimme Lean Sausage Style

In a medium saucepan, melt the coconut oil over low heat. Add the flour and mix well, making a roux. Add soy milk (or other non-dairy milk) and stir over low heat until smooth. Add nutritional yeast, broth or bouillon, pepper and sage. Heat over low heat, stirring frequently for 10 minutes. Gravy will thicken as you cook and you can add water if needed to thin.

Add crumbled vegan sausage, if using, and stir well and heat until cooked. Serve over fresh baked biscuits and enjoy!
